Hands on supervision of kitchen operations in all areas relating to specialist Chinese menu. Maintain a high standard of food preparation and presentation - constantly inspects the taste, temperature and visual appeal. Makes sure that all dishes are uniform and that established portion sizes are adhered to. Responsible for the planning of Specialist Chinese cuisine menu and related food promotions. Develop and test new dishes and products. Controls in place to follow recipes and methods of preparation. Work closely with the Executive Chef on the development of food cost and quality control procedures relating to Specialty Chinese menu. Comply with all hotel and corporate guidelines Create dishes for owner and VIP guests as requested
